Macarons

If you haven't seen a blog post for a while this is what I've been up to... 

In addition to the SIS PTA Cooking Club meetings once a month, I've been getting together with another group of friends for Swedish cooking AND when there is something really special, like macarons, the 'specialist' will host friends for more cooking/baking.  I keep insisting to Gordon the way I spend my days benefits him and the girls.... 

Blog posts to come on all the cooking club recipes as soon as I can manage.  Don't hold your breath, though, I've been intending to do them since December!  One thing is certain, wherever you are in the world you can always find a group of foodies!

Macarons

My friend, Heidi Shenk, lived in France for a few years with her family where she learned how to make beautiful macarons (so I'm not the only one keeping busy during the day, learning new skills to benefit my family!). 

What I learned -
  • always cook with friends, work and clean up is easy!  When I made macarons on my own at home I used every bowl in my kitchen, what a mess!
  • I need to buy a stand mixer, a hand mixer will not whip egg whites stiff enough for a good macaron.
  • the silicone mats sold specifically for macarons are not worth it... baking paper is better.
  • a hand sifter does not work on almond flour, suck it up and use a spoon to force it through a fine colander... or what I haven't tried yet but hope works is a small food mill.
